Wendy Rasumussen, illustrator of The Gittle List 2013 award winning book, Polarity Bear, shares a favorite recipe. Wendy says, “Having a large veg. garden I’m always in a panic to use up my vegetables. One of my favorite summer recipes is from the The Victory Garden Cook Book.”
4 large ripe tomatoes
3 cucumbers
1 large green pepper
10-12 scallions
3 cloves garlic
salt
¼ cup red wine vinegar
1/3 cup olive oil
3 cups tomato juice
1 ½ cups beef broth ( or veg. broth)
Hot pepper sauce
Worcestershire sauce
Freshly ground pepper
Peel, seed and chop tomatoes into ¼ inch dice. Same with pepper and scallions. Mash garlic and salt in mortar and beat in vinegar and oil. Combine with veg. and add tomato juice. Add broth and season to taste and chill. I don’t puree; the chopped veg. give a wonderful texture. It is easy and the chopping is the most time consuming part.
